Gluten-Free Pizza Crust

You'll need:

1/4 cup milk 1/4 teaspoon xanthan gum
2 large eggs 1 teaspoon salt
1/3 cup cornstarch 1/4 cup shortening, melted
2/3 cup rice flour

Beat the milk and eggs together. Add the cornstarch, flour, xanthan gum, and salt. Mix in melted shortening.

Spread into a greased 9"X13" pan or spread with a spatula in a 12-inch circle about 1/4 inch thick on a cookie sheet or round pizza pan, leaving a thicker crust around the outside of the circle to keep the sauce and cheese from running over onto the pan.

Spread sauce evenly over the unbaked crust and top with your favorite toppings. Bake in preheated 400° oven for about 25 minutes. Makes 6 servings.
